Cookie experiment…

After finding a new recipe online for chewy chocolate chip cookies, making them and changing it up, I have a NEW favorite chocolate chip cookie!!! Here is my recipe…


Joy’s Thick and Chewy Chocolate Chip Cookies
2 1/2 cups flour
1/2 tsp. kosher salt
1/2 tsp. baking soda
1 1/2 sticks soft butter
1 cup packed light brown sugar
1/2 cup granulated sugar
1 T. vanilla extract
2 egg
1-1/2 cups semisweet chocolate chips

Beat butter and both sugars until well blended. Add in vanilla, egg and yolk until light and creamy. Add in flour, salt and baking soda just until mixed. Stir in chocolate chips by hand. Chill at least 1 hour.  Pre-Heat oven to 425. Drop large spoonfuls of cookie dough onto parchment paper lined cookie sheets. Bake one dozen at a time. Place in oven and IMMEDIATELY lower temperature to 375.  Bake 9 minutes or until tops golden.  Repeat for the next 2 dozen, with raising the temperature again and waiting until it is heated completely before placing in the oven, then lowering the temperature to 375 again before baking for 9 minutes. Let cool on cookie sheets before transferring to cooling rack.
Yields 3 dozen cookies
